Spicy Turkey and Green Bean Stir-fry

Serves 4 |
Quick, easy, wholesome and full of flavor.
Ingredients:
1 lb green beans |
4 teaspoons coconut oil |
1 tablespoon sesame oil |
1 1/2 lb ground turkey |
2 cloves garlic, minced |
2 tablespoons minced ginger |
2 tablespoons rice vinegar |
4 tablespoons soy sauce |
2 teaspoons chili garlic paste |
Directions:
- Preheat the oven to broil. Line a baking pan with aluminum foil.
- Place the green beans in a mixing bowl. Pour 2 teaspoons of the coconut oil over top and toss to coat.
- Spread the green beans across the baking pan. Place in the oven to broil for 6-8 minutes until the green beans are just beginning to char.
- Pour the sesame oil and remaining 2 teaspoons of coconut oil into a large pan, bring to medium-high heat. Once hot, add the ground turkey, garlic, and ginger. Cook and stir until the turkey is fully browned.
- Add the green beans to the pan and stir together. Pour the rice vinegar, soy sauce, and chili garlic paste into the pan. Cook and stir for 1 minute.
- Transfer to serving plates and enjoy!
